Pecan Cookie Bars
Cookie Bar Crust:
Cooking spray
2 C. flour
½ C. (1 stick) butter or margarine
⅓ C. Sugar
¼ tsp. salt
Preheat oven to 350°. Spray 13x9” baking pan with cooking spray and line with parchment paper. Spray parchment.
In a large bowl at medium speed, beat flour, butter, sugar and salt until mix resembles coarse crumbs. Press firmly into the bottom of the pan and ¼ of the way up the sides. Bake for 15 minutes or until golden brown. While crust is baking, prepare pecan filling.
Pecan Pie Bar Filling
2 eggs
¾ C. light corn syrup
¾ C. sugar
2 Tbls. Butter or margarine
1 tsp. vanilla
1¼ C chopped pecans
In a large bowl, beat eggs, corn syrup, sugar, butter and vanilla until well blended. Stir in pecans and pour over hot crust. Spread evenly.
Back for 20 minutes or until filling is firm around the edges and slightly firm in the center. Cool completely and cut into bars.
Makes approx. 32 bars
